Hi, if I do not change any of the ADS1299 default configurations, what is the sampling frequency that I have by measuring only the signal from channel 1?

Hi,

This can be seen in the ADS1299 datasheet.

The default output data rate is fMOD / 4096 (250 SPS) where fMOD = fCLK / 2. This this is a simultaneously sampling converter, there is no internal mux and only using 1 channel does not affect the sampling rate or output data rate.
