Getting 0.9-1.2MHz Analog Signal from Ultrasound Transducers to Laptop

I have 2 ultra sound transistor range from 0.98-1.2 MGHZ. I will pulse one of them with a function generator, but on the other one I want to have a cost efficient method of analyzing the signal and plotting it (so not an Oscilloscope). I am trying to capture the signal and send it from analog to digital. The voltage range is -5 and +5V.

I was wondering if there was a microcontroller capable of doing this, or how I would go about doing this if I needed to customize a hardware solution (ADC, etc.)?

I plan on taking in the signal on my laptop afterwards and analyzing it digitally (FFT, spectral analysis, etc.), so I would probably need at least a sampling rate of ~3 MHz to sufficiently satisfy Nyquist.
