I'm capturing four SD inputs from one TVP5158. The DVR code can support this as multi-channel input using one 8-bit port. With a bit of software and routing work, I could also run the TVP5158 multi-instance with four outputs, one to each of the '8168's 8-bit video input ports.
Using the (second) multi-instance approach, will I gain use of additional VIP port output buffers/VPDMAs, and will it help with the VIP port "personality" in the errata, or improve immunity to the "don't write too much with the CPU" erratum?

No, this will not help much in errata, except that you have now separate handles for each channel.
