I would like to understand the data flow in the AM335x EVM .

Strong QoS require priorities. You will need to define how you network should work (i.e. critical applications, low priority app,...).

Here is some interesting tests :
After that, if the WiFi network signal is poor, there will be more delay where you are on WiFi due to packet loss and discarded packets but this delay is not big enough to be noticeable.
