DURING DEBUG - For both TPD6S300 & TPD2S300 how am I going to measure the CC capacitance to check that I have chosen the correct capacitance for the CC lines as outlined in the data sheets ?

There are a couple of ways to do accomplish this. I would recommend using a multimeter that can measure the capacitance with a resolution of 10 pF (easiest method). Make sure to power both devices before measuring the capacitance of the line. Feel free to look at the EC table in the Datasheet to reference the test setup for measuring capacitance on the CCx lines. Hopefully, you have a test point on the CCx lines.
You can also use a function generator producing a square wave, an o-scope, and a resistor with a known value in series with the function generator to measure the RC time constant to calculate the capacitance.

For 1., you're understanding is correct :-)
For 2., I was referring to the test setup needed to measure the capacitance on the lines. The EC (electrical characteristics) table states how we measured 60-120pF on the CC channels in the TPD6s300 (look below). Make sure this device is powered on while measuring the capacitance.
