Can I design with a part like the SN65HVD379 one connection that can support the RS485 and RS422 protocols?
The device is a RS485/422 compatible driver / receiver chip. I don't understand your question?

I dont know yet which protocol I will use, 485 or 422.

these are no protocol standard but electrical standards only. Because RS485 is a little stronger than RS422, this device can deal with both.
