Analog sensor voltage measurement across a resistance to generate an alarm

I am a beginner in this field and would really appreciate some help with my new project. I am working on a gas sensor which shows detection of a gas by drop in its sheet resistance value. So I am planning to interface the sensor with a microcontroller (preferably a low power device like MSP430). I will be providing a constant current across the sensor and then detect the fall in potential difference when the resistance drops. I plan to acquire that drop in voltage value through an ADC to signal the detection of the gas on a microcontroller. I would really like suggestions about which components (MCU, IC etc) I would require for such an application. Would the application be too complicated or a relatively easy one?
