For 500W I would recommend the UCC28180 single phase. If you require a low height profile then the UCC28063 interleaved controller is a good option,
The purpose of the buck to provide a second stage of control over the output voltage. Stepping down from 500V to 1V requires a large spread in duty cycle for one stage, 1V corresponds to 0.2% duty cycle when 500V is 100%. It is not realistic to expect a power converter to operate across such a wide range of duty cycles. By placing the buck stage after the bridge stage it should be possible to provide finer control over the output voltage.

Interleaved PFC is very popular in digital TV's where there the goal is to make the TV as slim as possible, therefor the height available is restricted. The interleaved PFC reduces the size of the PFC inductors allowing smaller parts to be used which is ideal for designs where space is at a premium.
