For the Peak Reflow Case Temp = 245°C, is this the maximum temperature of is there a recommended tolerance.
Would a higher temperature during reflow, cause the LMZ14201TZE-ADJ/NOPB to short (VOUT pin 7 shorting to GND pin 4)

With a higher temperature during reflow, there's higher risk that internal solder balls would connect to one another. Please follow the reflow recommendations in this document.
