How can I change the axis of the acceleration data?

In the data sheet of Keyfob it's written that to enable notification for the x-axis, I have to write 01:00 to character handle 0x003B.

But If I would change the axis, for example if I would choose the y-axis or z-axis?

    Then you would write to the corresponding address of the other axises characteristic configuration descriptors. I suggest you use latest BTool (provided with BLEv1.4) allows you to discover complete attribute table. It's done by righ-click on connected device handle (left pane) and choose "read values" or something like that. When you see the complete table and you are able to read descriptions, it'll be easier for you to find correct places to interact with.

    I think you need to understand the concept of GATT Architecture and how data is stored and exchanged in a BLE solution.
