As I understand the only difference between CC2540 and CC2541 is USB on the former and I2C on the later. I want to use SensorTag fw and iOS app, but SensorTag mostly refered to CC2541.
I was mostly working with CC2540, I wonder if I can use the existing CC2540 PCB that I have to start using SensorTag as a starting point?

It all depends on just what you really want to use the SensorTag code for. If your primary goal is to use the code so that you can use the iOS App then it would be a good starting point. Otherwise, you will have to use software i2c, which can be done and there is code in the forum that does it, to talk to the sensors used in the SensorTag design.
The simpler of the two methods would be to use you CC2540 code and add software i2c.
