Which example from the STM32 Bluetopia SDK is recommended to learn how to define a custom LE profile? including managing advertising, etc...

Additionally, is there a PDF which breaks down the process?

imo, the SPPLE demo is so not useful...

You can take a look at the SPPLEDemo or any LE based demos for this. Unfortunately, there is not a document that matches your exact requirement. You can take a look at the BluetopiaCoreAPI.pdf for a description on the APIs

Perhaps you want to have a look at the KeyFobDemo app that is provided in the CC256XMSPBTBLESW. As noted, this demo app is available in the MSP430 release only, but it can be easily ported to the STM32.

Thank you for the tips. I end up using the heart-rate profile as an example.

fyi, the xxxDemo.c/h code is (imo) cluttered with the console code and commands for both server/client, which makes it hard to sort through.

Also, all demos seem to implement both server/client side... but most of my device needs only require simple ble server peripheral. It'd be nice to have a simple project defining a dummy server peripheral service as a example of how to manage initialization, discovery, pairing, etc... I'm sure I'm not the only one in that boat :)
