I am not sure for this. Are there differences of sensor network size between them?

I haven't tested the ENC28J60 with Contiki on the CC1310, but when you run the edge-router stand-alone on a CC1310, you will reach the RAM capacity limit very soon. For bigger (real) networks, you should use the CC1310 as a SLIP device connected to a Linux device instead.
