As you mentioned the user guide has described ADC14DC105 EVM only.
But the EVM is same for :
ADC12DC080, ADC14DC080, ADC12DC105, or ADC14DC105
Just ADCs will be replaced.
So even for ADC14DC080, you can go through the same document.
