I found in the schematic of the ADC16DX370EVM that the serial data interface is opposite in polarity when connected to the KC705 FMC interface.
So, can you please let me know why?

I think you're missing the ini file appropriate for the ADC in the HSDC Pro GUI. It's needed for the ADC to appear in the "select ADC" menu in HSDC Pro GUI.
We have those ini files for the 14J56 board.
