Have you tried looking at any of our SAR ADCs?
SAR ADCs will have a much shorter conversion latency and will be able to multiplex through multiple inputs much faster…

The first parts that come to mind are those from the ADS834x family. The ADS8341 and ADS8343 are quad 16-bit parts while the ADS8344 and ADS8345 are octal devices.
