You might be able to use one of the "single-cell" Impedance Track gauges that reside on your system board like bq27510-G1 or bq27505-J4 by using a voltage divider approach as shown in this app note:

Using the bq27510-G1, the only way the gauge will learn the new capacity of the pack you insert is as Ming says. I’d like to add to his information with a discussion about battery aging and which parameter you should monitor.
