I think the solution is viable based on what you have listed. For the high current rail, TPS53119 would be a good cost effective alternative.

TPS53219A is the alternative part. Also TPS53119 is a newer part with slightly different temp range.
To answer your question yes it is okay to design for higher current as long as the design considerations are taken care of.

LM3485 is designed to be used with a PFET. You can look at alternate parts such as TPS53119 that has a skip mode feature at light loads.

For the VIN capacitors, the input capacitance needed is based on the amount of the input RMS current the device will see. Once the maximum DC OCL set point is determined, the input RMS current can be calculated to determine the input capacitors needed…
