Yes, In theory you could actually use any pin frmo 0 -> 30, just would just need to make sure you are not conflicting with any other feature you might use (such as JTAG, Serial bootloader etc).

But if you plan to make this board, I would look into http://www.ti.com/tool/BOOSTXL-ULPSENSE where the schematic for the flow sensing looks similar and could probably be used instead…
Note that the number of possible buttons is 7 if external reference is used, 8 with internal.
The cap touch solution we have suggested using Sensor Controller is primary for the consumer market where cost is very important and where few buttons are needed…
