There are two reference designs that use TUSB321 linked below. TIDA-00728 may be more helpful for you and show cases TI's USB3.1 Gen1 2:1 Active Mux (TUSB542). Schematics are available for both on ti.com.
TUSB8041A does not support the DP protocol only USB. TUSB8041A also does not have Type-C configuration muxes integrated. The application you are referring to will require multiple ICs. I recommend looking at the reference design for reference.
