Did you attach the load and then enable the IC? 7.5 Ohm is likely too small to start into, but if you add it after you start it should work. See section 8.4.1 in the D/S.

The TPS62162-Q1 is designed to reliably provide 1A output current. It cannot be used for higher output currents. So it is not clear to me what you are trying to calculate here.
