Hi Alex, if I use the amc3301 to measure currents in a shunt of a photovoltaic installation in the DC side, can I power multiple amc3301s with my raspberry pi without any problem? this would be using the circuit recommended in the data sheet.

As Kai mentioned, the power requirements would be your limitation. The 42mA is MAX with a load on the high side LDO. If you are doing a differential to single ended conversion, those amplifiers would need to be powered as well, so that would be additional power budget to consider.
