this is very simple: The linear input voltage range of AMC3301 is +/-250mV. -> Rshunt = 250mV / 5A = 50mR. The shunt has to dissipate a heat of P = 250mV x 5A = 1.25W. So I would take a 4-terminal shunt of at least 2W (better more). You could take such a type, e.g.:
