I understand this device is unconventional (compared to general-purpose opamps).

The device is unity gain stable so it can be used as a voltage follower. However, stability is dependent on the load, feedback resistor values, gain, etc. Figure 11 in the datasheet shows the capacitive load drive capability in a gain of 1V/V.
This device has very low input bias current. To ensure the low input bias current the device offers I highly recommend following the guidance on PCB layout provided in the datasheet. Was this device chosen for its very low input bias current specifications? If not, we might be able to provide a better device that will meet your design needs.
