I bought the VSSOP-8 adapters to use with the OPA2350, as indicated on the datasheet.

The pin dimensions of the IC do not match with the dimensions of the breakout board. Did I not get the right breakout board for this IC?

I'm not familiar with the breakout board part you got, but you can get TI's DIP-Adapter-EVM here:
www.ti.com/.../dip-adapter-evm adapter evm&tisearch=Search-EN-Everything
This has more boards than you need, but it does have 6 boards that will fit MSOP/VSSOP 8 pin parts. It also includes a couple of terminal strips that are used to configure these to plug into DIP sockets.
