If you do not use Pin 1 and Pin 5 of the OPA602 offset Trim pin, Is it correct that nothing is connected to this Offset Trim Pins?

Yes, it is okay to leave the OPA602 offset trim pins floating if you don't intent to use the offset adjust function. In that case, the voltage offset will be within the limits listed in the datasheet Electrical Characteristics table.
