We are using this board to connect a MIC on Ubuntu, but output are pretty low even through I already set Volume to 100%,
Is there anyway to raise the volume as I need set Frequency or bitrate or Encoding to a special value?

The volume for this should be set in your USB driver panel. The HID on the device allows for button presses to send an interrupt to control this, but if you have already set to maximum volume there are not any additional gain blocks in the device and you would need to apply digital gain in your system.

If the problem is that your analog microphone output is very low and not utilizing the input range of the ADC, then adding an external hardware amplifier may be beneficial. But if this is not the issue, then you can apply gain to the captured digital signal. For example, if you were using audacity to capture your recordings, audacity allows you to add gain to each channel.
The device itself only encodes USB audio, the format will depend on how you choose to record and store the data.
