Hi I would like to know if the device would be ok if fed from a guitar on the mono ADC input.
The PCM2912 was designed with microphones in mind, but there is no reason you couldn't use an instrument input as well, you will just need to adjust the gain based on your signal level.

Guitar pickups want to see a high input impedance, so buffer the input with a FET-input op-amp.
