ADS8685: How many ADS8685s can be daisy-chained?

There is no problem to use three devices in daisy-chain configuration. Too many devices in daisy-chain mode may lead to timing errors which will violate the setup parameter requirements and result in incorrect data capture by the host controller. Also, note that the overall throughput of the system is proportionally reduced with the number of devices connected in a daisy-chain configuration.
