If possible, I am trying to view the digital output of the ADS7038Q1EVM-PDK. Looking at the EVM User's Guide, I see that there are Analog Input Data Captures (which I am able to see my input), but I do not see any for the output? Is there a way to view the digital output on the ADS7038Q1EVM-GUI?

I am not sure I understand your question?
The data displayed by the GUI on the time domain, as shown from the user guide below, is in fact the measured data from the ADC. This is the output from the ADC.
The data is displayed in Codes on the Y axis, this can be changed to volts on the right top corner of the graph, shown in yellow below. the data can also be exported, this option is also in the yellow highlight.

Are you asking about when a channel is configured as a digital output?
In this case, you are right that this cannot be seen in the display page. you will need to measure the output through the input jumper, JP5
Also, in the channel selection page, as shown below, the digital output is configured as high or low.
