I am interested in the ADS8319B as an alternative
Are these the same die and just screened differently or are they two different die?

Hello Francis,
The key difference is linearity, highlighted in section 5 of the datasheet, with the B version offering better INL and DNL performance.
The ADS8319IB also specifies a minimum SNR of 92dB, where the non-B version only specifies typical values for SNR.

I have confirmation that both versions of the ADS8319 are the same die; the only differences are the test limits.
