The ADS1262 analog inputs can be configured as either differential pairs or single-ended inputs. The single-ended inputs can be referenced to any other pin, it does not have to be AINCOM. So you can make e.g. AIN0 = +VIN and AIN4 = GND.
Note that when measuring single-ended inputs, the ADS1262 PGA must be disabled

If the customer wants to use all 10 ADC channels, should they refer to AInCOM, and should AINCOM be connected to ground or to REFOUT?

The customer can refer to any analog input if they want to use 10x channels. They do not have to use AINCOM, the AINCOM pin could have been called AIN10 because AINCOM is like any other analog input.
Connecting to REFOUT is called a pseudo differential measurement, and will allow the user to take advantage to a larger portion of the ADC full-scale range. The PGA will still need to be disabled

I understand that
(1) AINCOM is also a separate AIN channel AIN10, which is used to form a pseudo differential channel with other channels;
(2) Any AIN channel can be used as a reference (grounded or connected to a reference voltage), and AINCOM can also be used as a reference;
(3) AINCOM can be connected to REFOUT, and the 2.5V reference is used as a reference;
(4) AIN0-AIN5 references AINCOM (connected to REFOUT) to achieve ±2.5V signal measurement, and AIN6-AIN8 references AIN9 (grounded) to achieve 0-5V single-ended signal measurement

Those statements are all correct.
But again, you can measure with AINCOM-AIN4 for example, and then connect AIN5 to REFOUT. I just want to reiterate that AINCOM is like any other analog input.
