Does anyone know of a work-around to use this eval kit with Windows 7 OS?

Michael,
ADCPro will only work with XP, however you can communicate with the device using a terminal program like hyperterminal....which is no longer included with Windows 7. I believe Tera Term is still a free download. You will need to download the Virtual COM Port driver from the TI.com website. You should be able to find the link under the TUSB3410 device page. You will need to configure your terminal for 230K baud, N, 8, 1. I've attached a document with the control character codes that are used to set the various register settings and to collect data.
Best regards,
