Can you explain the signification of the 3 first lines of the table 11: "JESD204B frame format for LMFSHd=42111" from the datasheet please (page 45)?

The first row is number of uncoded bits. This is always 8bits. The second row is number of encoded bits, which is always 10bits. This is show the 8b/10b encoding that is occurring with the data. The third row is showing the nibble or 1/2 of the octet (F paramter).
