When I use a thermocouple channel, should the peripheral wiring be as close to the chip as possible?Will it cause interference or loss of accuracy if it is too far away from the chip?

It is possible long wires could act as an antenna and pick up interference, so in general it makes sense to keep the wiring short if possible. Twisted pair wiring will help reduce the effects of noise and stray capacitance, while shielded wiring can help eliminate interference.
