The ADS7826 uPower familiy of A/D converters are offered in a QFN-style package with an enhanced pad (thermal pad). Is it necessary/recommended to use this pad?. If yes, connection to GND?

Yes, it is necessary to use the thermal pad. In the case of the ADS7826, it's not necessarily for thermal reasons it is for mechanical stability. The pad on your board should be tied to GND.
