Part Number: 430BOOST-ADS1118
1. The online documentation states that this is compatible with MSP430G2 Launchpad, however that part shows as OBSOLETE. Is this BOOST board compatible with MSP-EXP430G2ET ?
2. Are these BOOST boards designed to be stacked on a single Launchpad Board or do I need a Launchpad board for each BOOST? For example, I need 2 thermocouples.

1) Yes, the 430BOOST-ADS1118 should work on the MSP-EXP430G2ET. This an updated MSP-EXP430G2 LaunchPad with EnegryTrace, but is otherwise equivalent.
2) Unfortunately, the 430BOOST-ADS1118 is not stackable with itself, you would need a separate LaunchPad for each 430BOOST-ADS1118. For one, the header on the BoosterPack doesn't extend upwards, and also the SPI communication would conflict since the same /CS pin is used on each board. However, that doesn't necessarily mean that you couldn't use the 430BOOST-ADS1118 with other BoosterPacks; however, it would have to be at the top of the stack. There is a BoosterPack Compatability Checker at dev.ti.com/ that can help you determine which BoosterPacks can be stacked.
