I've checked one of the other application engineers and we're still not sure what is used on the EVM. I've pulled up the BOM used by the contract manufacturer and it does not specify the M or Z variant.
My guess is that the initial build for the device was arranged by our product line and we gave the contract manufacturer the devices directly to be used for the EVMs. Since then, we haven't had a new build and the contract manufacturer hasn't asked about the variant in the orderable. Also, the applications engineer that put this EVM together has moved on, so I'm not sure which devices were sent for the initial build.
There are two things that I'm doing now. I've ordered an EVM, which is on its way to me now. Once I receive it I'll be able to test it directly (or read the markings) to determine which variant is on the EVM. The other thing I can do is go into the office to see if I can find an EVM. Unfortunately, our site is in the middle of moving locations, and I'm not sure where some of the EVMs were packed up and unloaded.

I understand the current challenges and I really appreciate you extending your help to have it figured out. We've shared the initial information with the customer but they'd like to confirm the actual variant before ordering the EVM, so I guess we'll be waiting for the results of your inspection once the EVM has arrived.

I received my DAC80501EVM today and found that the EVM does use the M variant. I read it off the device on the board. Here it is magnified:
With the M called out in the EVM review documentation, and the EVM that I've now received, I'm reasonably sure that the customer will receive the M variant if they order it.
I'll try to update the build documentation so that the M variant is now called out in the paperwork.
