I'd like to set the pattern period and exposure times to 2500us and set bit depth to 6 as I can do in DLP4500-EVM. But I cannot find the same options in the GUI. What should I do to achieve this?

Please refer to the Display and Light Control EVM GUI - https://www.ti.com/lit/ug/dlpu074a/dlpu074a.pdf. Page 11+ would have more details over what you will be interested in. This should give a simplified explanation of what the EVM is capable of and the Light Control functions.

Yes, you can stream an external pattern through HDMI. You need to configure the EVM in external Pattern mode in 'Light Control" Tab of the GUI.
The video mode is used for displaying a video. In this mode , the input image undergoes image processing to enhance the visual experience. It should not be used for pattern display.

Yeah, I get it. My question is how can I use this external pattern mode? When I choose this mode in the GUI, the projector simply display my computer's screen and also some mistake at the same time. Can I stream any frames rather copying the screen? What should I do?

Page 11 of the Programmer's Guide gives you all the options for video source format that the EVM can support.
As long as you have some video source that supports these formats and does not violate the chipset you can use this feature to send content from various sources. You can copy your computer screen on the EVM, use it in extended mode, connect it to a video generator.
