In this user guide page 12,the signal format is described Data is written on the falling edge and read on the rising edge. Is it understood that the MOSI and SIMO signals only change at the falling edge, and the sampling occurs at the rising edge?

    You can read the following from page 11. 

    Data is written and clocked out of the SPISOMI output on the falling edge of SPICLK from the Piccolo TMS320F28023 to the Host. 

    Data is read and latched at the SPISIMO input on the rising edge of SPICLK from the Host to the Piccolo TMS320F28023. 

    I believe reading/sampling on the rising edge, the data is stable. From the highlighted arrows it shows in the middle of the bit where the data should be stable. The falling edge would be when data bits could be changing and being written.
