DLPNIRNANOEVM: External MCU to communicate with DLP NIRscan EVM

Dear TI team,

I am planning to desgin external board for NIRscan EVM to communicate it over UART. Right now, I am using GUI from TI to communicate with EVM and receive, plot and extract data. Instead of using GUI, I am planning to initiate scan process on EVM and receive data using external MCU board and then transfer this scan values to PC over USB. Finally received data will be plotted in the way the GUI does. I guess the received data must be made "meaningfull" using DLP spectrum library.  I am planing to use Arduino on my board. The data I converted must be same as DLP GUI outputs.

Could you please guide me what would be the steps to achieve this goal? Is it doable? Are there any examples about this way of receiving data?
