Hey Dane,
Internally it will hold the state high but the key difference will be in open collector mode you won't be able to actually drive the output high. Push pull will be able to actually drive it.

will it be able to latch the signal? I mean when the input become float after a high state, will it be able to keep the output high/low?

This depends on the states of the other inputs and the output structure. It will latch if you follow the truth table properly.
For example in the last two conditions when using open collector output structure, it won't be matter what the Dn input is (Denoted with the 'X') it will remain High. However, in the first two conditions where /Reset is high floating it wouldn't guarantee any state.
However, I would advise against leaving any input floating
