Can I connect the output of this Open Drain Inverter in parallel to a mechanical switch to GND?

    Yes. In theory, there is no difference between an electrical and a mechanical switch. (In practice, you might have to care for things like ESD and arcing, although the latter is unlikely with logic voltages and currents.)
