Also i would like to know about the most appropriate open source OS supporting the same.

Hello,
There is no EVM with TMS570LS2135 on it. For developing purposes HDK with TMS570LS3137 on board is what can be used. Here is the link to mentioned HDK: www.ti.com/.../tmds570ls31hdk with specifications and prices.
You can find differences in Table 3-1 in device datasheet.
