I would recommend looking at the LAUNCHXL-F28027F files, the only difference is the F280027F vs F280027 device soldered.
For the Gerbers any Gerber viewer can be used. I believe the design files were developed in Eagle.

they have only OrCAD Cadence license for Schematic design. When they try to open .sch file with it, it doesn't show anything.

Understood. Perhaps they could look at the OrCAD documetnation. https://resources.orcad.com/migration-guides-and-videos/migrate-eagle-schematic-and-pcb-data-to-orcad I don't have the ability to convert this file for them.
If they cannot convert it we provide a PDF schematic, I recognize this will take an hour or two to recreate, but it shouldn't be too much work for the customer to do. Finally for layout the Gerbers are provided as an example, of course the customer would need to lay this out in the tool of their choice.
For newer devices we provide the schematic and layout in the native Altium format, this is a more popular platform for our customers, and easier to convert to other tools like OrCAD.
