I found the application report, "Online Stack Overflow Detection on the TMS320C28x DSP" (SPRA820) online. Are these concepts applicable to TMS320F28377S?

Yes, the appnote talks about a generic C28x based device. They are applicable to TMS320F28377S as well

I forgot to ask one thing. Do you have a document that describes the details of the emulation analysis unit in the processor - details of the registers etc.
