     1) Do you mean each ADC has its own ADCIN channels?  

      There are 3 ADCs :   ADCA  ADCB ADCC   , total 3*16  ADCIN channels ?

     2) How to confirm the signal is assigned to the channel 7?

If we see for the Highligted section from the Snippet shared ISENB is connected to C7 throught PGA3 (Input pin of PGA3 is the I senB & PGA output would be routed to C7 in this case ) 

Similarly for the other case as well.

Yes below is correct, but we need to look at the muxing of these channels in datasheet to see which channels are mapped where.

Please note not all Channels of ADC are connected to device pins few are internal channels
