Hi Jordan,
The sensor + ADC is linear to about +/-1 deg. C, so doing a 2-point temperature trim over the range of interest in the customer's manufacturing flow could result in a tighter accuracy (conceptually this is very straightforward, but executing this in an accurate and economical fashion is very challenging).
From a practical perspective, if the customer's actual operating temperature range doesn't include very cold temperatures, the typical accuracy will be better than +/-15 C (worst case accuracy is at -40 deg. C).
