This is given in the CPU section of the Family User's Guide, eg for MSP430x2xx: http://www.ti.com/lit/pdf/slau144
In particular for that family, you'll need to refer to sections 3.3 and 3.4. Section 3.4.5 has the instruction map, which lists the opcodes for all the core instructions. Sections 3.3 and 3.4 have the details of the instruction format and the addressing modes, which you'll need to fill out the non-opcode parts of the instruction.
You should also pay close attention to the errata sheet for the MCU you're using; the assemblers normally contain workarounds for the CPU errata.
