If you refer to the WaveBuilder generator of the DRV2510EVM, the frequency of the sine wave can be adjusted with the time between steps. This option will separate the points the time you think necessary, modifying the signal frequency.
Regarding the amplitude, the waveform is adjusted from 0 to 100 (being 0 the minimum value and 100 the maximum value of the sinewave). I suggest to use a tool to generate sine wave points:

I suggest to configure this tool with a max amplitud of 100 and in decimal format. Remember that the number of points can also affect the frequency of the device.
And how the pwm frequency impact to output?
The PWM frequency doesn't have an impacto to the output. The device actually just take the differential result of the analog inputs to work. The PWM switching frequency doesn't have any impact.

up to 65 kHz. The optimum frequency for solenoid operation is less than 200 Hz.

In order to achieve a higher frequency, you would need to select a low time between the steps (as you mentioned, it can be down to 1). Also, you can reduce the number of points in the link that I provided.
Regarding your questions about the solenoid operation, I think this depends of the characteristics of your solenoid, but we recommend to use frequencies below 200Hz as you correctly mentioned.
